You can not unlock iphones yourself if you have done ANY recent updates on Firmware via itunes! (unless you have bought a iphone direct and outright from apple where it is sim free - or if its VodaFone who unlock for free if you ring up and ask them to do it!)
It updates the Base Band (or in simple terms - go into settings>general>about> and the modem firmware version number is what matters when it comes to unlocking!) 01.59.00 was the last base band capable of being unlocked - and even then you had to jailbreak your phone, on the older firmware and install a cydia tweak called Ultra-Snow.
Now - Apple release so many updates to keep patching bugs, issues and jailbreaks that it updates the Base Band every time you do it! There is a way to stop the Base Band being updated but you need 3rd party apps such as snowbreeze to jailbreak, and build custom iPa's (Hacked iOS FW) - and you would need to do this Everytime you wanted to update the Software on your iphone.
Read my previous post in this thread regarding a Service Providers FACTORY unlock. very cheap anyway.

Merlin, is it no longer possible to change the baseband to ipad and unlock that way? It's been a while since i've network unlocked a iphone but I have a new iphone 4s 64gig waiting for a release to come out before I can do anything
