Meaning that the club or company in question will only pay Compass a management fee to employ staff and train them on the required equipment, and the club will set the offers and food that they sell.. And with that, the club will take the profits from the kiosks.
So if the contract is worth £3million, that's all compass will get... Whether the kiosk takes in £2million or £2billionm the club will deal with the loss or profit.
Hope this helps

My understanding of the contract is that it was agreed that if compass paid for the fitting out of all the catering outlets and they were then given a 10 year contact for that, we did not have a pot to piss in back then, and did not have the money to do the work ourselves. The club would only get a percentage of the income over a certain amount, last year VT tried to buy compass out but they refused. Why would he try and buy them out if the club were already getting most of the profits?
