I just read that if a bid has been accepted then deals can happen after 11pm. Not sure if true though?

It can still go go through provided some documentation went through to the Premier League before 11.

I think James McCarthy would have been faxed/mailed a form to sign because of the time, then send the form back so Everton could then fax that form through to the FA to confirm the signing?

GETTING DEALS DONE
"If a club gets a 'deal-sheet' into the Premier League before 2300 BST they can keep working on the fine details of a transfer after the deadline.
"The deal-sheet has to be signed by the buying and selling club and the player and must include the agreed terms of fee and wages. If that is completed correctly and is in before 2300, clubs will be granted extra time.
"If it is an international transfer deal, the clubs have until midnight, because that is when Fifa's Transfer Matching System closes. If it is a domestic deal, the clubs have until 0100 BST."

13 million for him yet 12 million for Eriksen and his wages isn't bad well in what's been reported.
