It has religous connotations. If you are not religous you shouldn't have them! give them to me, I'm not religous either, but I have no morals when it comes to chocolate eggs!

Think it symbolises the rebirth of Jesus, who's mother was a bird evidently.

Jesus was Lactose intolerant so had to share his eggs out amongst his disciples.

We continue the tradition to this day.

It's effectively a pagan tradition about fertility which was taken up by the Church after Constantine's time.
