yes but sam gambled it didn't work , now hes calling the debt back in of money he lent himself

Not necessarily, the july 31 deadline was put on by Sam as far as I can see.
if Vt offers him what he wants tomorrow then I'm sure he wouldn't be stubborn enough not to take it.
as I said elsewhere, Sams position has improved with the rebranding and debt-equity promise from VT so he will allow the pressure to creep up, and in the meantime its likely his demands will go up too.

We're not asking him to go to court but we dont get the whole generosity of sam to scrap a large amount of debt

maybe thats what VT wants, sam to get annoyed and up it so then VT can say sam is to blame and we cant afford what hes asking or something like that?

Because its not open and shut.
Sam thinks the club have breached terms of the agreement, and he is probably right. However this was his argument last time and he couldn't get a summary Judgement. If he goes to court to try to prove it not only may the court think it isn't material enough to judge that the money must be paid, but also stuff may come out which he doesn't want (see what the judge said last time), also should he win the case then VT will probably pull the plug.
Its a mess and we as fans are stuck in the middle of a chess game between 2 rich men.
